Ingredients
For the Marie Rose sauce
- 1 tsp Sarson’s Malt Vinegar (add more to taste)
- 100g mayonnaise
- 2 tbsp tomato ketchup
- 1 tsp Worcestershire sauce
- 1-2 drops Tabasco (or other hot sauce)
- ½ tsp grated lemon zest
To serve
- 150g fresh prawns, chopped
- 2 whole prawns (head and all), to garnish
- ¼ iceberg lettuce, shredded
- ½ beef tomato, deseed and finely diced
- ¼ cucumber, deseeded and finely diced
- ½ avocado, finely diced
- 1 tsp lemon juice
- 2 slices of brown bread, buttered and triangled
- 1 pinch of cayenne pepper, to garnish
- Slice of lemon, to serve
Method
- To make the Marie Rose sauce, combine all of the ingredients in a bowl.
- Coat the tomato, cucumber, and avocado in the lemon juice together, being careful not to break up the avocado.
- Dress the prawns in the sauce so they are generously coated (they may not need all the sauce, any remaining sauce can be served on the side).
- To serve, add the lettuce to the bottom of a glass, then the diced cucumber, tomato, and avocado. Add a generous spoonful of prawns to form the top layer.
- Garnish and serve with the brown bread, lemon, and bottle of Sarson’s on the side. Enjoy!
