How to Pickle Red Cabbage

Ingredients

  • 500ml Sarson's Distilled Malt Vinegar
  • 1 medium-sized red cabbage, finely sliced
  • 2 tbsp salt
  • 1 tbsp granulated sugar
  • 2 bay leaves
  • 1 tbsp coriander seeds
  • 1 tbsp mustard seeds
  • ½ small onion sliced

Method

  1. Layer the cabbage in a bowl with salt then cover and leave to stand overnight.
  2. In a saucepan, bring the Sarson's vinegar, sugar, bay, and spiced to a boil and then set aside to infuse.
  3. Thoroughly rinse the cabbage and pat dry with kitchen roll.
  4. Pack into a sterilised jar, adding a slice or two of onion as you go.
  5. Pour in the vinegar until the cabbage is covered then put on the lid. Shake and leave for a week before eating. Enjoy!
