Pickled Cucumber & Onion Salad

Bright, tangy, and refreshing, this pickled cucumber and onion salad is made with Sarson's Malt Vinegar, which lends the dish its iconic, craft-brewed barley malt flavour.

Ingredients

For the pickle

  • 1 cucumber
  • 1 large red onion, thinly sliced
  • 1 small handful of fresh dill, finely chopped
  • 1 small handful fresh parsley, finely chopped
  • 1/2 tbsp sugar
  • ½ tsp salt
  • 150ml Sarson’s Malt Vinegar
  • ½ a chilli, finely diced (optional)

Method

  1. Slice the cucumber into a large Kilner jar with the red onion, garden herbs, chilli (if using), sugar, salt, and Sarson’s Malt Vinegar.
  2. Put the lid on the jar and shake well.
  3. Serve with a crusty baguette and your favourite soft cheese. Enjoy!
