
Pickled Cucumber & Onion Salad
Ingredients
For the pickle
- 1 cucumber
- 1 large red onion, thinly sliced
- 1 small handful of fresh dill, finely chopped
- 1 small handful fresh parsley, finely chopped
- 1/2 tbsp sugar
- ½ tsp salt
- 150ml Sarson’s Malt Vinegar
- ½ a chilli, finely diced (optional)
Method
- Slice the cucumber into a large Kilner jar with the red onion, garden herbs, chilli (if using), sugar, salt, and Sarson’s Malt Vinegar.
- Put the lid on the jar and shake well.
- Serve with a crusty baguette and your favourite soft cheese. Enjoy!
